These vegetable fritters are made with carrots, asparagus, bell pepper, beans flour and eggs. They are delicious and easy to put together. You can use most vegetables to make this. The asparagus can be swapped with green beans, zucchini or any vegetable of your choice.
If you have kids, this a sneaky way to add more veggies into their diet. You can hide loads of veggies in the fritter mixture and they wont even notice they are eating vegetable.
I had mine for breakfast, but these vegetable fritters can also be served as a snack or an appetizer.
Ingredients:
1 cup shredded carrots
1 cup asparagus
1 cup diced red pepper
1 cup sliced white onions
2 tablespoon olive oil
1/3 cup beans flour get here
3 large egg
1/3 teaspoon red pepper
1 teaspoon of salt
Preparation
Cut and shred the vegetables into tiny pieces.
Place the vegetables into a bowl and add the beans flour.
Crack three eggs and add them into the bowl
Add the salt and pepper, then stir the fritter mixture together.
In a pan add two tablespoons of olive oil and coat evenly.
Scoop the vegetable fritters mix into the pan and cook the fritters for 2 to 3 minutes on medium heat.
Flip the fritters and cook for an extra 1-3 minutes or till its crispy and golden brown.
Transfer the fritters into a paper lined bowl.
Serve with your favorite dip.
