Tilapia Stir Fry with Vegetables served with Brown Rice
This dish is very easy to put together. It takes about 40 minutes to prepare and cook. Instead of ordering a takeout make this easy and delicious stir fry for dinner. Tilapia and vegetable is stir fried and served over brown rice. Feel free to switch the vegetables to the ones you prefer. I used green beans, carrot and sweet pepper.
Ingredients:
1 cup of green beans chopped
2 tilapia fillet cut into 2 inch pieces
2 cups of boiled brown rice
1 cup of Carrots chopped
½ cup of onions
2 tablespoon cornstarch
2 tablespoon soy sauce
3 sweet pepper
1 tablespoon dry basil
1 clove of garlic crushed
1 tablespoon ginger grated
2 tablespoon olive oil
½cup chicken broth
2 tablespoon of honey
2 teaspoon red flake pepper
1 tablespoon sesame oil
Preparation:
- In a bowl combine chicken broth, corn flour, grated ginger, crushed garlic, basil,1 tbs sesame oil, 2 tbs honey,soy sauce and red flake pepper. whisk all the ingredients together.
- Divide the sauce into two and reserve one part.
- Add tilapia into half of the sauce. leave it to marinate for about 15 minutes.
- In a large nonstick skillet add 1 tbs of olive oil heat till it’s simmering. Add tilapia and cook for about 7 minutes carefully turning each side.
- Remove fish once its cooked
- Add 1 tbs of olive oil allow to simmer, add sliced onions, green beans, sweet pepper and carrot. saute medium high until it’s crisp tender.
- Add reserved sauce and allow to thicken.
- Serve over hot cooked brown rice or your favorite side.
