This another tasty and interesting way to have potato and egg. Potato is lightly fried till it browns and then combined with tomato’s, bacon, avocado and finished with a topping of eggs and fresh herb. Hash potato and eggs can be made with any choice of vegetable. It all depends on what you like. The bacon can also be substituted with sausage or hot dog.
Here is how i make my hash potato and egg breakfast.
Ingredients
- 1 pound new potatoes, cut into ½-inch pieces
- 2 Â tablespoons extra-virgin olive oil
- 2Â small red peppers , thinly sliced
- 1½ teaspoons salt
- 1/2Â teaspoon black pepper
- 1 medium onions sliced
- 3 eggs
- 1 ripe avocados, chopped
- 1 turkey bacon cut in thin stripes
- 1/2 cup chopped fresh cilantro
- 1/2 cup cherry tomato or 1 medium tomato diced
Preparation
In a large skillet, cook the potato with 2 tablespoon of oil for 5-8 minutes or till it starts to get soft and brown.
Remove the potatoes from the skillet bowl to make space for the tomato and onion stir fry.
Add the onions, tomatoes, and red pepper, stir fry. Add salt and black pepper to taste.
Once the tomato’s are cooked, put the potatoes back into the skillet  and mix it all together with the avocado and bacon. cook in low heat for 2 minutes.
Once your hash is set, just fry the eggs in a separate skillet.
Add the cilantro and eggs on top of the hash. Serve.
