This garlic shrimp fried brown rice is simple, delicious and easy to put together. I normally use long grain white rice for my fried rice, but this time around, i decided to use wholegrain brown rice. To cook this dish, you don’t have to adapt to the exact ingredients i used. In the past, i have used chicken, beef, green peas, cilantro, scrambled egg, white rice and now brown rice. Fried rice is a versatile dish and can be customized based on the ingredients you have.
Garlic Shrimp Fried Brown Rice Recipe
Ingredients
- 4 cups cooked brown rice
- 1 medium onions chopped
- 2 cups broccoli
- 2 tbs olive oil
- ½ tsp red chili pepper
- 1 cup carrot diced
- 2 bell peppers diced
- 1 scotch bonnet(optional)
- 1 cup shrimp
- 1 stock cube
- ½ tsp garlic
- 1 tsp dried parsley
- Salt to taste
Preparation
In a bowl, toss the shrimp with the salt, garlic and parsley.
Let the shrimp marinate for 10 minutes at room temperature.
Heat a large pan on high heat. When the pan becomes very hot, add 1 tablespoon of the cooking oil and swirl to coat pan.
Now add the shrimp, spreading them out around the pan so that they are not overlapping.
Let the shrimp fry, for 50 seconds. Flip over and let the other side fry for 50 seconds.
Remove the shrimp from the pan onto a plate.
Set pan on stove and put heat on high heat with the remaining 1 tablespoon of cooking oil, swirling around pan to coat evenly.
When the oil is very hot, add the onions and pepper. Stir fry for 50 seconds.
Add the broccoli, bell pepper, carrots and shrimp and stir fry for 2 minutes.
Add the brown rice, red chili pepper and stock cube and toss to mix evenly with the veggies and shrimp.
Allow the rice to heat up on low heat for about 2 minutes or till it’s piping hot.
Serve.
