This Chicken salad sandwich spread is creamy, full of flavor, and very easy to prepare. To make this sandwich perfect you need a good bread. I used Keto bread for this recipe. You can cook your chicken or use a store-bought rotisserie chicken; canned chicken is another option that is handy for busy days.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 2/3 cup yum yum sauce
- 1 red bell pepper diced
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 1 1/2 teaspoons dill
- 8 slices
- 1 head of lettuce
- 1 oz. smoked gouda cheese, shredded
Instructions
- To cook the chicken:
- In boiling water, add the chicken breast and let it cook for 20 minutes or until done.
- Take out the chicken and shred it. You can also use a food processor to pulse it a few times to finely chop the chicken.
- Add the salt, dill, black pepper, red bell pepper gouda cheese, and yum yum sauce, mix well. Add extra yum yum sauce as needed, until the spread reaches your desired consistency.
- Place the lettuce on the bread, then add the chicken sandwich spread on top. Serve immediately.
