Apple cider vinegar is a very good marinade for all kinds of meat and seafood. I never lack a jar in my home because of its immense health benefits ( Checkout my posts about the 10 amazing uses of apple cider Vinegar).
For this recipe, I combine Apple cider vinegar, Lemon, Chicken, Soy sauce, Ginger, Parsley, Garlic and other ingredients in a food processor and puree into a paste. I then marinate in the refrigerator for about 1 hour to 8 hours, and grill.
Ingredients
2 tablespoon Lemon juice
whole Chicken cut into 4 or more parts
1/3 cup chopped Ginger
2 cloves of Garlic
3 tablespoon chopped Parsley
1/2 cup Onions
1 tablespoon Chicken seasoning
Salt to taste
1 teaspoon Pepper
1/4 cup Apple cider vinegar
Olive oil
Instructions
Combine all the ingredients in a food processor and blend to a paste.
Place the chicken in a bowl or a seal-able plastic bag.
Refrigerate for at least 1 hour or up to 8 hours.
Remove chicken from the marinade, and discard leftover marinade.
Heat your grill or oven and place the chicken on the grill and cook for about 8 minutes per side, or until cooked through and it’s no longer pink.
Serve with your side or pack and store in storage containers and save for meal prepping.
